Today's Beef Cattle Doing Better at Providing a Great Eating Experience Every Time for Consumers

Today's Beef Cattle Doing Better at Providing a Great Eating Experience Every Time for Consumers It takes high quality cattle to produce beef that today's consumers are wanting and forty years ago, when the Certified Angus Beef Program was starting up- a great eating experience for the consumer was not always delivered by beef cattle producers. Mark McCully, Vice President, Production for the Certified Angus Beef Program believes that Angus breeders have done an exceptional job in recent years in having an eye to making today's beef better. "We've done that by selecting for carcass merit, specifically selecting for marbling. The resulting quality grades, the resulting Certified Angus Beef brand acceptance rates have dramatically increased over the last decade as a result of that very intentional focus to produce that more highly marbled product that does deliver on that taste promise."

McCully adds that marbling is most certainly the key for taste. "It absolutely is. We have kinda known about that- the meat scientists have shown us that for a long, long time. There's other things that play into that taste experience but marbling is key." McCully says that the Angus breed has allowed producers to produce and raise calves that can end up producing beef that will deliver marbling that satisfies consumers.

And McCully says that the genetics of Angus cattle have allowed the number of carcasses that will qualify for the CAB program to almost double, just in the last ten years. "That supply has helped us grow and drive demand- and it has been a pretty fun story."

McCully talked with Radio Oklahoma Ag Network Farm Director Ron Hays at the recent American Angus Assoication Convention, where Angus breeders were celebrating forty years of the Certified Angus Beef Program.
