Lower Beef Cut Out Values Could Be Due to Seasonal Pressure, Says KSU's Dr. Glynn Tonsor

The current market slump for boxed beef and cash cattle could be a seasonal reduction but Dr. Glynn Tonsor, K-State Extension livestock market economist, said it could be a more disturbing sign. Heís just not sure right now.

Cut out (values) pulled back hard and there was a slight pull back on cash cattle, Tonsor said.
I think it spills over from food service kind of mothballed, he noted.
The only bright spot in that cut out report was the prime rib cuts are still up but itís a small part of the animal, Tonsor said.
Could this be the result of seasonal pressure?
My gut tells me it is typical seasonal but could be something more, Tonsor said.
I hope itís not fatigue from at-home cooking, he said.
Rib values are up so it is evidence people are paying more for holiday celebrations, Tonsor said.
Perhaps more concerning is the pull back in other primals, he said, with chuck down 3 percent since November and brisket down 5 percent.
A solid positive factor right now is the pipeline remains current with demand.
Weíre within 1,000 or 2,000 head of being within prior week and year numbers, Tonsor said.
Weíre still running these facilities pretty hard and I hope we can get through until spring ushers in warmer weather and more grilling, he said.
Itís a good news story to get volume up and keep them up, Tonsor said.
One of the keys to keeping the slaughter numbers up is keeping the plants running. In fact, 19 of the top 20 processing plants are in counties that have fewer Covid-19 cases than two weeks ago.
