Jennifer Litchfield Claims People's Choice Grand Prize in 2022 Dairy MAX State Fair Ice Cream Contest

Jennifer Litchfield Claims People's Choice Grand Prize in 2022 Dairy MAX State Fair Ice Cream Contest Everybody has a favorite flavor of ice cream, and the debate over whose ice cream is the best rages on each year at the State Fair of Oklahoma. The dairy farming families of Dairy MAX and the Oklahoma State Fair host an annual “From Cow to Cone Homemade Ice Cream Contest” during the fair each September to promote dairy products and raise awareness for dairy farming among the greater community.

Of course, the main ingredients in ice cream come from milk-and the most important part of that is milkfat, which gives ice cream its smooth and creamy texture. Ice cream just wouldn’t be ice cream without your favorite flavorings and mix-ins. From vanilla to chocolate chip caramel swirl, there’s no limit to how you can flavor your ice cream!


During the contest, participants bring two quarts of their best homemade ice cream to Center State in the Creative Arts Building. Expert judges sample each bowl and select a winner. “Being a judge for this contest is an honor in and of itself,” said Susan Allen from Dairy MAX. The 2022 panel of judges included:

· Ali Bowman, Oklahoma’s Dairy Ambassador, Oklahoma State University student majoring in Animal Science with a focus on Livestock Merchandising, student employee of the Ferguson Family Dairy Farm on the OSU campus, President of the OSU Dairy Science Club, and her family farm, Okie-Bow Dairy Farm.
· Sheri Glazier, Dirt Road Dietitian, LLC, and Cousulting Dietitian for the Oklahoma Beef Council.
· Milford Jenkins, Executive Director of the Oklahoma 4-H Foundation.
· Kelli Payne, President of the Oklahoma National Stockyards, and former member of the OSU Dairy Judging Team.
· Scott Yates, Director of Food Safety Division at the Oklahoma Department of Agriculture, Food & Forestry.

When asked how you become an expert ice cream judge, Sheri Glazier said “years and years of preparation and investment. Let’s just say my house is no stranger to the enjoyment and deliciousness of the frozen and convenient dairy goodness. Fruity, chocolate, crunchy or salty, I have a sincere appreciation for the cow caregivers as well as the frozen treat connoisseur creators. The calcium and Vitamin D may just be the real hero though. It’s proven to assist in a solid bone foundation.”


The judges’ choices in each category included:

1st place, Karen Moseley, Oklahoma City, Double Vanilla Ice Cream
2nd place, Jennifer Litchfield, Oklahoma City, Vanilla Ice Cream
3rd place, Summer Aupetit, Oklahoma City, The Best Vanilla Ice Cream

Fruit
1st place, Jessica Grigsby, Jones, Bumbleberry Ice Cream
2nd place, Lacy Amen, Oklahoma City, Pina Colada Ice Cream
3rd place, Karson Potter, Edmond, Roasted Strawberry Ice Cream

Mix-ins
1st place, Rory Joseph, Jones, Cotton Candy Ice Cream
2nd place, Karen Moseley, Oklahoma City, Key Lime Pie Ice Cream
3rd place, Summer Aupetit, Oklahoma City, Vanilla Ice Cream with Salted Caramel Swirl

This year, Jennifer Litchfield claimed the prize with the People’s Choice ribbon with her Vanilla Ice Cream recipe, featured below.

Dairy MAX “From Cow to Cone” State Fair Homemade Ice Cream Contest People’s Choice Winner
Vanilla Ice Cream
Jennifer LItchfield
Ingredients:
400 g whole milk
380 g heavy whipping cream
50 g glucose
150 g granulated sugar
20 g fat free milk powder
1 T     vanilla paste
¼ t guar gum

Preparation instructions:
1. Combine milk powder and sugar in a small bowl, set aside.
2. Place cream, milk and glucose in a heavy bottom pan, over medium heat stirring occasionally to keep from scorching until it is a full roaring boil.
3. Add milk powder mixture and reduce heat to low and cook for 2 minutes whisking to prevent scorching.
4. Immediately place in an ice water bath. When mixture is cool strain through fine mesh sieve into a blender. Mix in guar gum in a blender.
5. Cure the base for 4 hours to overnight (refrigerated) and churn to manufacturer’s instructions.
6. Immediately place in a freezer safe container and cover with plastic wrap to prevent ice crystals. Harden for 4-12 hours.
