Choice Beef Sets Another 2025 High on Monday- Up $3.67 at $404.24

Boxed beef prices started the week sharply higher, with the Choice cutout at $404.24/cwt, up $3.67 from Friday, and the Select cutout at $377.14/cwt, up $6.38. This marks the highest Choice cutout value of 2025 and the highest overall since the COVID-era spike in 2020. The Choice/Select spread narrowed to $27.10. Monday’s load count totaled 80. Primal values were mostly higher compared to Friday: Chuck led gains at $366.43 (+$7.27), followed by Round at $356.36 (+$3.59), Loin at $493.13 (+$1.76), Rib at $591.34 (+$1.90), Flank at $234.48 (+$1.72), and Brisket at $334.68 (+$1.65). The only decline came in the Plate, down $0.31 to $274.42. So far in August, the Choice cutout is up $42.92.
