Boxed beef started the week higher after five consecutive down days, with Choice cutout rising $3.30 to $367.77 on 50 loads. Select moved lower, falling $2.19 to $361.23, narrowing the Choice/Select spread to $6.54 from $1.05 on Friday.

Compared to Friday, rib values jumped sharply from $491.25 to $505.83, while loins improved from $470.47 to $476.50. Chucks were essentially steady at $322.50 versus $322.45, rounds edged higher to $333.23 from $332.41, plates firmed to $257.74 from $256.98, and flanks advanced to $179.72 from $175.56. Briskets were the only primal slightly lower, dipping to $294.58 from $295.28.
